Two weeks ago, Costco had these beautiful large red snappers from South America – I tried to resist buying one but could not. When I got home, I realized, I didn’t know what to do with it. Well, the only way I know how to cook this is sinigang and steaming it. Because I bought a huge one, maybe 3 or 4 lbs – and I cut it in half and decided to steam the tail end and freeze the head for making sinigang later ….
